3.- The best way to drink it is… Unlike other liquors, mezcal is made to be drunk straight, in kisses, little by little and in small sips, with the right glassware in small glasses that allow the body of the distillate to be seen. Although it is also valid to drink it in a cocktail, as long as it highlights the aromatic and taste notes of mezcal.
4.- Make the first contact. Sight will be the first sense that will help us identify some of the properties of mezcal. It is necessary to observe the liquid, which must be clear, transparent, shiny and with hints of pearl. It should be noted that some will vary according to the type of agave used and the distillation process.
5.- Smell and identify. The second sense we will use will be the sense of smell, which will help us to relate the notes given off by the beverage. The options may also vary, but the one that will be present in most of them will be the smoked one, derived from its process, where the agave pineapples are in contact with the firewood. It is suggested to smell first the superficial part of the glass, then to put the nose into it to obtain by means of the sense of smell the different types of notes, which can be herbal, citric or sweet.
6.- Drink it with complements. For some they are flavor enhancers, for others they only lower the intensity of the mezcal, in many places it is served with orange slices and worm salt. The salt is a potentiator of the notes, since it highlights the smoked.
